- Take a pan,Pour sugar and add water and let it boil and melt until string consistency
- Add carom seeds,black pepper,red chilli flakes,bay leaf,fennel seeds,salt,food colour, jeera to sugar while boiling
- Then pour Raw mango and let it boil and get cooked until it becomes little soft and it will leave water.Keep boiling till the sugar syrup gets it's thickness or consistency,not very thick nor watery.
- Let it cool and cover it with net to avoid vapour.. Even after cooling it will gain thickness.
- Finally add vinegar as preservative to store for long life in a glass jar.
Raw mango is used for chutneys and sometimes to make sabzi as well. During summer, mom is used to make the khatta meetha rw mango gravy sabzi which is mostly done in the villages of west UP and Haryana. Usually when I make this raw mango chaat, I make it all sour and tart. In hinglish I would say, its only Khatta and not Meetha. so there is no sweet element in the recipe. If you prefer a balance of sweetnees and tang, then add some sweet tamarind chutney or saunth chutney in the chaat.
