  1. Heat oil in a pan and temper with the cumin seeds and ginger. Saute for a few seconds. Add the turmeric powder and garam masala powder.
  2. Then add the grated papaya, salt and fresh chilies. Mix everything well and cook, covered on a medium flame.
  3. Keep stirring at intervals and cook till all the moisture is dry. Keep aside to cool.
  4. Add the coriander leaves and gram flour. Mix well and keep aside.
  5. Take each ball of dough and roll out like a poori by dusting some flour. Place 1-2 tbsp. of the filling….
  6. Bring all the edges together. Secure it firmly & flatten it with your fingers so that the stuffing is evenl spread out.
  7. Now dust some more flour & roll out into a bigger circle, just like a chapatti.
  8. Heat a tawa / skillet and shallow fry the stuffed parathas one at a time, by drizzling some oil over it and around the edges.
  9. Serve them hot with any side dish, yoghurt, butter or pickle.
