- Make ready 2-3 bay leaves
- Get 1 piece Cinnamon stick
- Get 1 teaspoon Jeera
- Make ready 2 -3( pieces) cloves
- Take 3-4 ( pieces) green cardamoms
- Prepare Handful Coriander leaves
- Get Handful mint leaves
- Take 2 teaspoons Ghee
- Make ready 3-4 ( tablespoon) oil
- Take Pinch Red food colour
- Take 4-5 ( strands) Saffron dipped in 2- 3 spoons of milk
- Prepare to taste Salt
Steps to make Lucknowi Chicken Briyani(Awadhi Briyani):
- Wash and soak rice for half an hour. Now keep the water for boiling. When it boils add Bay leaves, Cinnamon Stick, Cloves and green cardamom Add rice to it and cook 80 % of it and strain the water.
- Fry 2 sliced onions till golden brown.
- Now take a bowl. Put yogurt and add tandoori masala, coriander powder, garam masala, jeera powder, Red Chilli powder, Haldi, salt, half lemon, one teaspoon of ginger garlic paste, coriander leaves, mint leaves and fried onions mix well.
- Add chicken into it and marinate for one hour.
- Now after one hour take fry pan. Add one teaspoon of ghee. Add finely chopped onions. Salute them till translucent and add another teaspoon of ginger garlic paste and saute for 2 mins. Now add this marinated chicken and let it cook. Lower the flame and let it cook for 10 to 15 mins.
- Now take a pot in which u want to make biryani. Put the half portion of chicken and then place half portion of rice. Again assemble rest of chicken over rice and again rest of rice over it. Add Kewra water, rose water, Red food water and Saffron milk. Close the lid and lower the flame and let it cook for 15- 20 mins.
- It will look this.
- When done serve it hot with some Raita, papad and aachar.
