The ingredients needed to make Satvik Platter:
  1. Take as needed Phulkas
  2. Make ready For subji
  3. Take 1 cup chopped cabbage
  4. Take 1/2 cup both together Chanadhal and brown chana
  5. Prepare 1/2 teaspoon Dhaniya powder
  6. Prepare 1/2 teaspoon chilli powder
  7. Prepare 1/4 teaspoon amchur
  8. Make ready to taste Salt
  9. Make ready 1" Ginger grated
  10. Prepare 1-2 pinch Hing /asafoetida
  11. Prepare 1/4 teaspoon Turmeric powder
  12. Make ready 1 handful Curry leaves
  13. Prepare 1 tbsp Coriander for garnish
  14. Prepare 1/3 teaspoon mustard seeds
  15. Get 1/4 teaspoon jeera and saunf
  16. Get For curd rice
  17. Take 1 cup cooked rice (let it be mushy tastes better)
  18. Get 2 1/3 cups curds
  19. Take 1/3 teaspoon jeera
  20. Take 1/3 teaspoon mustard seeds
  21. Prepare 1-2 green chilli
  22. Take 1-2 pinch Hing
  23. Take as needed Coriander for garnish
  24. Take 1" Ginger grated
Steps to make Satvik Platter:
  1. For subji preparation. Take oil in kadai add mustard jeera saunf curry leaves hing and turmeric to it. Once they splutter add cabbage and salt and let it cook for a while. Once don’t add soaked and boiled Chanadhal and brown Chanato the cabbage. Now mix in chilli powder amchur and Dhaniya powder with very little water and pour it into the cabbage and dhal.. let the masalas get absorbed with the veggies and dhal.
  2. Once done add coriander and garnish. Note soak the dhals for 6 hours and then pressure cook it for 7 whistles.
  3. Curd rice preparation. Mix in curds with mushy rice and then add tadka of mustard seeds jeera ginger hing and salt to it then garnish with coriander leaves.
  4. Phulkas preparation. 1 cup of atta mixed with approximately 750 ml water (if needed add more) let the water be lukewarm to get a soft dough make a soft dough rest it for 20 mins. Note add oil and salt to get a nice dough.Then roll thin rotis cook on one side till small bubbles come then flip and cook on the other side till big bubbles come then place it on heat and cook till done. Grease it with ghee immediately to avoid getting dry.
  5. Serve all three on special days when one is not supposed to have onion or garlic.
