  1. Heat a non-stick pan and dry roast the shrimps till crisp. Set aside to cool.

  3. Add in the chopped tomatoes and let them cook, stirring frequently. Add a pinch of salt to hasten this process.
  4. Once tomatoes are completely cooked, add the red chilly powder and the turmeric. The turmeric is only for colour, hence the minimal quantity.
  5. Mix in salt, sugar and some quantity of the chopped coriander, leaving the rest for garnish.
  6. Gently mix in the roasted shrimps.
  7. Once mixed, switch off the flame and add in the lemon juice and remaining coriander and serve. This dish can be eaten hot or cold, with rotis, parathas, bread, rice…just about anything and can be stored in the refrigerator for up to a week.
