  1. Make ready 2 cups raw/bar boiled rice
  2. Prepare 1/2 cup split black gram/urad daal

  5. Prepare 1 teaspoon fenugreek/methi seeds
  6. Take to taste Salt
  7. Take 1/2 teaspoon soda bi carb/cooking soda
  8. Take 1 cup buttermilk
  9. Take as needed Oil
  10. Prepare as needed Water
Steps to make Set Dosa:
  1. Combine rice, Daal,sago,fenugreek seeds and poha in a bowl and soak in adequate water for 5-6 hours
  2. Strain well
  3. Grind smooth into a runny paste by combining with buttermilk
  4. Leave in a bowl covered to ferment overnight in a warm place
  5. Add soda and salt to taste the next day and mix well
  6. Heat oil in a skillet and spread well
  7. Lower the heat to medium and add laddle full of the batter and spread like a pancake
  8. Cook each side covered for 3-4 minutes or until golden brown and crisp
  9. Serve warm in a set of 3 along with sambhar or peanut/tomato chutneys
  10. Tip: keep adding 1 tablespoon oil before cooking a new batch of Dosa on the skillet
