  1. Peel, cut the potatoes into 4 pieces each. Boil the potatoes with water and salt until soft.
  2. Strain the potatoes and mash it with potato masher or just with a spoon.
  3. Let it cool a moment. If you would like to use sago pearl, please soak the sago pearl in advance. Here in Indian, I use the local sago/sabudana. I soaked it for minimum 30 mins - 1 hour.
  4. Add the chopped spring onion and chili, salt, pepper, drained and soaked sago into the mashed potato. Taste it whether need more seasoning.
  5. Shape the mixture into flat round potato patty. Keep it aside.
  6. Heat the oil in frying pan.
  7. Deep the potato patty into egg white.
  8. Place it into the frying pan, deep fry it until golden brown both side.
  9. Transfer out to the plate with a napkin.
