First time I heard about and also had lauki ke kofte at my in-law's home. I had never heard nor knew that a curry is made from bottle gourd.
Steps to make Lauki ke kofte (bottle gourd curry):
- For Kofta: Peel and Grate bottle gourd and let it rest some time. Strain all the water and keep aside to use in gravy. Add besan and mix well. Add 1/2 tsp coriander powder, salt and chili as per taste.
- Heat oil in a deep pan for frying kofta. On medium heat, take a spoonful of mixture and fry till golden brown on both sides.
- Make kofta with rest of the mix in any size or shape as you like.
- For Gravy : Grind Onion, In a Pan heat oil and add onion. Fry till onin changes color.
- Grind Tomato, add it to onion with remaining spices. Keep stirring continuously till oil starts to separate. Do not let it stick to bottom.
- Add milk and let it boil. Add water and let the gravy cook for 3-4 min. Add Koftas in gravy and boil for 2-3 min more.
- Kofta Curry is ready to be served garnish with Coriander leaves and serve.
