When smoking chicken, choose wood chips that will complement the bird. Pecan, mesquite, cherry and apple are all popular wood chip flavors. If you have a smaller chicken, be light with the hickory chips, as too much hickory on smaller meats can create a bitter flavor. It's a nice wood that can be.
Steps to make Sahi chicken in smoky flavour:
- Lets start making sahi chicken,heat up the pan and add oil. Now let it hot and pale colour. Next we will add half of quantity sugar in the oil for caramalized. Then all the whole spices(bay leaf,dry chilli,cinnamon,cardamom,cloves,black pepper and mace). Stir it 30 sec till the aroma comes out.
- Now we will add chicken. Here I am marinated my chicken with salt. Add chicken in the pan and fry it for about 5 min. So we are on our way,now we will add kashmiri red chilli powder and fry it in medium flame for about 5-7 min.
- Now the time to add all the paste(poppy seeds,melon seeds,cashews,raisins,green chilli). Mix it nicely untill the raw smells goes. In this stage you can adjust the salt. Add 1/2 cup of water and cover it with lid. Let it cook in low flame around 10 mins. After 10 min remove the lid and check the chicken weather it cooked or not.
- Now we will add the remaining sugar and garam masala. Put the flame on high. Mix it well and now add crushed kasturi meethi(dry roast). In this stage if you wish you can add 1 tsp ghee. Now put the flame off, cover it with lid and let it set for 2 min.
- Our cooking is over now the time for magical touch. Take a steel bowl, place it on the middle of the curry. In meantime I already burn a piece of charcoal in another stove. So put the burn charcoal in the steel bowl and put some oil or ghee. And immediately cover it with the lid. Leave it for 5 min and now the charcoal and steel bowl…..and ready to serve!!!!!! It goes well with pulao, roti, naan, paratha, rumali roti etc…..enjoyyyy….!!!
