The ingredients needed to make Smoky Gawar:
  1. Make ready 250 g Gawar fali/ cluster beans ( fresh, soft, small or medium size)
  2. Make ready 1/2 tsp red chilli powder
  3. Prepare 1/2 tsp coriander powder
  4. Get 1/4 tsp turmeric powder
  5. Make ready 1/4 tsp saunf/ fennel powder
  6. Get 1/4 tsp ajwain/ carom seeds
  7. Take 1/4 tsp hing/ asafoetida
  8. Prepare 2-3 drops ghee/ clarified butter
  9. Make ready to taste Salt
  10. Get 1 tsp lemon juice
  11. Get 1 inch piece of charcoal for smoking
Steps to make Smoky Gawar:
  1. Remove the ends of the beans. If the gawar is long, tear into half or 2-3 pieces. Wash and boil the beans with little salt. Strain and keep in a big bowl.
  2. Add all the dry spices(except ajwain)to the gawar along with a pich of hing. Mix well.
  3. Make space for a small spoon or katori in the center of the bowl. Heat a piece of charcoal on flame till it is red hot.
  4. Place the hot charcoal in the small katori or spoon in the bowl. Put remaining hing and ajwain on the charcoal. Now pour few drops of ghee on the burning charcoal and immediately cover the vessel tightly, so that the smoke remains inside the bowl. Let the smoke get infused into gawar completely for 4-5 minutes.
  5. After 5 minutes, remove the charcoal and the gawar with the same spoon or pour contents of katori in the gawar and mix well.
  6. Add 1 tsp of lemon juice and serve the yummy smoky gawar with tomato and onion salad.
