- Get to taste Salt

- Get 1/4 tsp baking soda -
- Get 1 tsp oil -
Though I tried this after years, I was happy with the result, as I was bit worried how it would turn. Aloo Bonda is a famous snack and street food in Tamil Nadu. It has crispy outer cover and yummy aloo/potato stuffing inside. The aloo masala used in the bonda can be made with many variations.
Instructions to make Aloo Bonda:
- For stuffing : heat oil in a pan, add jeera, rai, coriander seeds, hing, curry leaves and stir it
- Add cashews till it turns to golden brown.
- Add onion and saute it well. Then add ginger and green chillies and saute it.
- Add haldi, chilli powder, garam masala, Salt and mix it well
- Now add mashed potatoes and mix it properly.
- At last add coriander leaves and lemon juice and mix it well
- Turn off the burner and keep it aside
- For batter : take a bowl, add besan, cornflour, haldi, red chilli powder, ajwain, Salt and combine well and then add water and mix well.
- Batter flowing consistency is thick, then add oil and baking soda. Mix gently.
- Now take stuffing in ur palm and make a small or medium sized ball
- Dip this balls in a batter and then deep fry
- Stir occasionally till it golden brown.
- Ready to eat ur Aloo Bonda. Enjoy with Green Chutney or Tomato Sauce
