- Prepare 1/2 kg Semolina
- Get 1/4 cup Edible gum (Gond)

- Take 1 cup Dulce de lecheulce
- Make ready 2 cup+ 2 tbsp Clarified butter

This is a festive recipe prepared especially for Rava ladoo or rava laddu is a well-liked Indian sweet that is prepared from semolina (rava), ghee, little milk. These ladoos are prepared majorly in most of the South Indian homes during festivals and puja's. This semolina/rava ladoo famous during diwali and Sinhala Tamil New Year. During this festival families exchange plates of sweets and savouries with friends and neighbors.
Steps to make Caramel Semolina Ladoo:
- Take a big and thick bottom pan or kadhai.
- Add 1/2 cup ghee in it.
- When the ghee becomes hot, fry gum in it. When the gum blossoms and looks crispy, remove it from ghee with the help of a sieve.
- In the same pan roast the Coconut pieces and grind in the mixer. - Now roast Dryfruits and roasted well.
- Now add ghee and Semolina (Suji) in the same pan and roast on low flame.
- While semolina is roasting, make the Dulce de leche in another pan.
- We will take a heavy bottom pan. - Apply 1 tablespoon of clarified butter in it.
- Now put milk and sugar in it. - Boil the milk on high flame. - Stir occasionally.
- Milk will start to thicken. it takes approx 50 minutes.
- Now add 1 tablespoon of ghee and stir.Now add baking soda and keep stirring continuously.
- At this time, the foam will appear in very high quantity so keep stirring it.
- The foam will start to finish in 7 to 8 minutes and it's colour turned golden.switch off the gas.
- When the aroma starts coming out of Semolina (Suji) indicates that it is cooked properly.
- Now mix all ingredients well. Allow the mix to cool down.
- Take a small portion from this and shape it like a Ladoos.
