  1. Heat vegetable oil in a wok (any deep cooking pot or pan will do). Splutter mustard seeds and cumin seeds, and add the curry leaves and dried red chillies. Allow the seeds to finish with all the noise.
  2. Add the crushed garlic, ginger and chopped shallots along with some salt and fry them until golden brown.
  3. Add the spice powders- turmeric, chilli, coriander and pepper and saute on low heat for a 1-2 minute. You can always add more spice if you like it (and can take it).
  4. Add the turmeric paste and chopped tomatoes, mix and saute again for another minute.
  5. Add 1/2-2 cups of water and add some more salt and allow the mixture to boil. Add the a pinch of asafoetida, and cook on low flame with the lid closed for 2-3 minutes for the flavors to sync together.
  6. Boil it down to the thickness of a clear soup (that is, almost watery).Open, taste and adjust for any salt, pepper or spices and add the chopped coriander leaves and serve hot.
  7. Best used as a curry to mix in rice, and it makes a sour and spicy desi soup too.
