  1. Make ready 250 gms Ladies finger (Okra)
  2. Make ready 1 medium size shallot - thinly sliced
  3. Prepare 2 Tbs Olive oil
  4. Get 1 tsp Cider vinegar or 1/2 lemon juice
  5. Get to taste Salt
  6. Make ready Black pepper
  7. Make ready Green chilli finely chopped (optional)
Instructions to make Okra Salad:
  1. Start by preparing the vinaigrette, in a small bowl mix the sliced onion, vinegar, salt, sugar and pepper and leave to marinate. I tend to do this in advance; the longer the better you end up with a scrumptious pickled onion marinade.
  2. Wash the ladyfingers, cut the end bits, place in a bowl or microwave steamer drizzle with some water and a little sprinkle of salt. Cover and steam in the microwave for 3-4 minutes
  3. Test the okra if cooked by inserting a sharp knife if soft but still with a crunch then it’s perfect.
  4. Empty in a serving dish drizzle with the marinated onion vinaigrette give it a good stir. (Adding the vinaigrette to the warm okra help to absorb the juices from the marinade)
  5. Leave aside until its cold before serving. Really delicious and healthy dish.
