  8. Prepare 1 Parmesan cheese grated. Leave cheese out for 1/2 hour and grates much easier.
  9. Prepare 1 Italian parsley
Steps to make Pasta With Bacon And Peas:
  1. Place frozen peas in a bowl of water to being thawing.
  2. Start boiling the water for the pasta. You want a large pan with about 4 quarts of water.
  3. Add chopped onions with just enough olive oil to sauté. The pancetta will add a lot of flavor and fat to the sauce.
  4. Once the onions begin to become transparent/ or golden if you prefer, add the garlic.
  5. Add pancetta to the onions and garlic. Keep heat on low.
  6. Drain peas.
  7. Add to sauce. Cook for only a couple of minutes more and then remove from heat.
  8. Once the water comes to a rolling boil, add a handful of sea salt.
  9. Add the pasta and stir continuously for about three minutes. Then, stir occasionally until the pasta is al dente. I have found this is about 2 minutes before recommended cooking time.
  10. Drain pasta and combine with sauce. Add Parmesan cheese and parsley, if desired.
