- Rinse rice 3x and let soak in lukewarm water
- Optional: cut up beef in tiny pieces and place in pressure cooker or regular pot with ~1 cup water. Add salt and pepper and cook at medium heat.

- Fry cut onions in a pot with a little added canola oil. Cook at mid-high heat

- Place beef in pot with fried onions
- Drain 3 cans of red kidney beans from their liquid and add to 1st pot
- Mix tomato paste with 1 cup water (or juice from beef pot) and add into pot. Cook at low heat for ~10mins
- Add salt as needed
This dish is made with red kidney beans, and it's very tasty! Not really sure what traditional red beans and rice is supposed to taste like. However I think this has potential but like other reviewers said too dry. I didn't do any research on what red beans and rice is supposed to look like when my husband requested it (it's saucy!), and went straight to this recipe.
