- Boil baby potatoes. Drain, peel it and make perforations with a fork.
- Soak cashews in warm water for half an hour and grind it into smooth paste.
- Heat oil in a pan and shallow fry boiled potatoes for 3-4 minutes. Now add red chilli powder, turmeric, cumin powder and salt. And fry it for another 3-4 minutes. Then keep it aside.
- Heat oil in a kadai and splutter cumin seeds.Then add cinnamon,clove, cardamom and bay leaf and sauté it.
- Into that add onions and sauté it. Then add ginger garlic paste and sauté it until the onion becomes light brown.
- Now add red chilli powder, coriander powder, turmeric powder and salt and fry it until the raw smell goes. Now add chopped tomatoes into this and sauté it until well cooked. Cool this and grind it.
- Heat oil in a kadai and add the grind masala paste and sauté it. Add the roasted potatoes into this and mix until the potatoes got covered in the masala.
- Now add enough water and cover and cook until the gravy become thick.
- At this point lower the heat and add cashew paste and mix well.
- Adjust the salt and turn off the heat. Now add yogurt and kasuri methi and mix well.garnish with coriander leaves. Cover it for 10 minutes and serve.
