Our dum aloo recipe is also called Punjabi dum aloo. Chilli-coated potatoes in dum aloo curry are cooked with cream, tomatoes and a flavourful paste of whole spices and onions. Dum Aloo or Aloo Dum, a rich and special dish in Kashmiri Cuisine and also in Punjabi Cuisine. The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices.

Instructions to make Dum Aloo:
  1. Half boil the potatoes, peel them. Deep fry till golden brown.
  2. Make paste of onions,ginger,garlic and whole garam masala.
  3. Make paste of soaked khas khas and badam.
  4. Heat oil, add onion paste, saute for 3 mins now add khas khas badam paste, saute it countinusly otherwise it will stick to bottom.
  5. Add tomato puree, saute for 2 min. Add fresh cream and mawa, cook till oil get separated.
  6. Add haldi, redchilly, dhania,salt and garam masala with 2 teaspoon water. Stir it. When spices incorporated with gravy add kasuri methi and cook it for 2 min.
  7. Now add deep fried potatoes and mix well. Add 1 cup water and cover it. cook for 7-8 min.
  8. Garnish with some kasuri methi and dhania patti. Serve with naan or kulcha.
