I made these chicken buns (鸡仔包) after having them at a dim sum restaurant. The filling is made of chicken and vegetable filling. Delicious baked buns which are crispy outside and soft in the middle. These rolls have a spicy I have tasted this in a bakery near by and this is my favourite.
Instructions to make Chicken buns:
- Dough: In bowl,add all-purpose flour, sugar, instant yeast and mix.
- Now add egg in dry ingredients and mix.
- Knead dough with milk water mixture properly.
- Add cooking oil,continue kneading.
- Cover the dough and rest it for an hour and a half,till risen in double.
- Filling preparation: In frying pan,add cooking oil, onion and saute until translucent.
- Add chicken garlic paste,ginger paste and mix well until changes color.
- Add salt, black pepper, red chilli and mix well.
- Add soy sauce, chilli sauce and mix well. Cover and cook on low flame for 5-6 minutes then cook on high flame until moisture is reduced.
- Let it cool down. - - In chopper, add cooked chicken,chop coarsely & take out in a bowl.
- Add mozzarella cheese,cheddar cheese,mix well & set aside.
- Knead prepared dough again, spinkle flour and knead until smooth.
- Grease hand with oil,take a small dough,make a ball and roll out with the help of rolling pin.
- In the center of the dough,add chicken filling, and make a ball.
- On baking tray,spinkle flour and place prepared buns. - - Cover and let it rest for 10 minutes (this helps to rise more)
- Apply egg on prepared buns and sprinkle black seeds.
- Bake in preheated oven at 180° for 25 minutes.
