Dum Aloo or Aloo Dum, a rich and special dish in Kashmiri Cuisine and also in Punjabi Cuisine. The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices.

- Boil the potatoes and peel them.Take a pan add oil to it add all dry spices like cumin seeds,cloves,tejpta,cardamon add onion and tomatoes cook it for a while.
- Grind them into puree.Take a pan add oil add ginger garlic paste and prepared puree and cook add all masala's except garam masala,cook till oil leave the sides.
- Soak cashewnut and grind into fine paste add these paste to the prepared puree and cook.Now add water to it and potatoes mix and let them cook.
- When the gravy is thick just add garam masala and off the flame.Add little cream and mix.Serve with roti or rice.
