- Prepare 500 gm potatoes cut into four halves
- Make ready 1/2 cup curd
- Get 1 teaspoon ginger paste
- Prepare 4 green cardamom

- Prepare 1 teaspoon kasuri methi

Our dum aloo recipe is also called Punjabi dum aloo. Chilli-coated potatoes in dum aloo curry are cooked with cream, tomatoes and a flavourful paste of whole spices and onions. Dum Aloo or Aloo Dum, a rich and special dish in Kashmiri Cuisine and also in Punjabi Cuisine. The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices.
Steps to make Dum Aloo:
- Heat some oil in a wok and add the potatoes with some salt.
- Cover the wok with a lid and saute it in between.
- Fry them untill golden brown
- Remove it from the wok.
- Add some oil if required. Add the cardamom and cloves and chopped green chillies. Let them splutter.
- Add the garlic paste with a little amount of salt and fry it till the raw aroma dissapears.
- Add the well beaten hung curd and red chilli powder and bring it to boil.
- Add the potatoes and saute them very well.
- Add some water and cover it with a lid.
- Add the remaining amount of salt and check whether the potatoes have become soft.
- If yes add the sugar.
- Once you get the desired consistency of the gravy, add the garam masala powder,kasuri methi and ghee.
- Mix them very well and remove it from the flame.
- Your dum aloo is ready to be served
