- Prepare 10-12 baby potatoes
- Prepare For curry:-
- Get 1 1/2 cup curd
- Take 1 tbsp malai
- Get 3 tbsp oil
- Prepare 1 bay leaf
- Make ready 2 nos black cardamom
- Prepare 4 cardamom/elaichi
- Make ready 1 small stick cinnamon
- Take 2 cloves
- Prepare 4 pepper corn
- Prepare 2 tsp cumin seeds
- Prepare 1 cup onion sliced
- Make ready 1/2 tbsp ginger paste
- Prepare 4 tbsp cashew nut paste
- Take 1/2 tsp garlic paste
- Get 1/2 tsp turmeric powder
- Make ready 1 tsp chilli powder
- Prepare 2 tsp coriander powder
- Get 1/2 tsp cumin powder
- Make ready 2 green chillies
- Prepare to taste Salt
- Get Dash water
- Make ready as required Oil for frying
Our dum aloo recipe is also called Punjabi dum aloo. Chilli-coated potatoes in dum aloo curry are cooked with cream, tomatoes and a flavourful paste of whole spices and onions. Dum Aloo or Aloo Dum, a rich and special dish in Kashmiri Cuisine and also in Punjabi Cuisine. The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices.
Instructions to make Dum Aloo:
- Collect all ingredients for dum aloo.
- Peel wash and pat dry the baby potatoes. Heat oil and deep fry till the potatoes are brown on the outside and completely cooked.
- In a deep vessel heat oil and add bay leaf, black cardamom, cardamom, cinnamon, cloves, pepper corn and cumin seeds.
- Once they splutter add sliced onions. Cook the onion till they turn brown.
- Now add ginger and garlic paste and give a quick stir.
- Add a dash of water and mix well.
- Add turmeric, chilli powder, cumin powder, coriander powder and chopped green chilli. Give a quick stir.
- Now add whisked curd. Turn the flame to high and keep stirring till the curd gets a boil.
- Cook till the oil surfaces. At this stage turn off the heat and let it cool a little.
- Grind the curry into a fine paste. Strain the curry into a pan.
- Add 2 cups of water to the curry and bring it to a boil.
- Add salt and cashw nut paste and cook for 2 minutes. Add the fried potatoes, kassori methi and sugar.
- Add cream and immediately turn off the gas. Stir and mix well.
- Serve hot with paratha.
