- Take 10 Potatoes (Baby)
- Get 03 Onions (Medium)

Our dum aloo recipe is also called Punjabi dum aloo. Chilli-coated potatoes in dum aloo curry are cooked with cream, tomatoes and a flavourful paste of whole spices and onions. Dum Aloo or Aloo Dum, a rich and special dish in Kashmiri Cuisine and also in Punjabi Cuisine. The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices.
Instructions to make Dum Aloo:
- Assemble all ingredients at one place.
- Boil potatoes with water in one steel container for about 20 mins. Peel potatoes cover and with help of fork, simply poke it all round then and fry till golden brown and keep aside.
- Put oil in the kadai and after it's heated add chopped onion and saute until golden brown and keep aside to cool down.
- In grinder machine add chopped tomatoes along with soaked cashews, fried golden brown onions and grind all together into a form of paste.
- In kadai put oil and butter, and include cumin and asafoetida after it's fried add the onions, tomatoes and cashew paste.
- Mix with coriander powder, turmeric powder, red chilli powder and salt
- Add curd and mix well.
- Now include all the fried potatoes and mix it very well cover it in simmer flame for 20 minutes
- Garnish it with chopped green coriander leaves and fresh cream.
- Serve with Hot parathas.
