- Took heavy bottom pan and add sugar and water. keep it on low flame until sugar melts.Cook it until it has little thick consistency.
- Take another pot and add ghee and oil. On low flame melt ghee. Heat them until they are very hot.
- Now when sugar melts, it should have little bit thick consistency.Add gram flour in portions and mix it to avoid lumps. Now cook it for 2 mins. Now add little by little amount of oil and ghee mixture that should b e very hot. Mix it until it is absorbed by gram flour. Now add oil and ghee again and mix it vigorously until it absorbs. Similarly add remaining oil and ghee by same process. keep about 2 tbsp of oil aside from that hot oil. You can see that gram flour becomes fluffy, soft and

Cook it for 1 min again add cardamom poeder and immediately pour in the mould and add remaining 2 tbsp hot oil.keep mould at warm place covered with Aluminium foil or cloth to avoid heat to escape out easily. Keeping in covered with cloth allows the mysore pak to have dark colour from centre because heat donot escape easily while top is light in colour because it cools earlier.
