The ingredients needed to make Sheer Khurma:
- Take 2 tbsp Ghee
- Get 12-15 Cashew nuts
- Make ready 7-8 Almonds
- Get 10-12 Pistachios
- Make ready 8-10 Golden Raisin
- Get 6-7 Chopped Dates
- Prepare 1 cup Vermicelli
- Take 1/2 cup Grated Mawa
- Take 1 ltr Milk
- Make ready 4 tbsp Sugar
- Prepare 1 tbsp Rose Water
- Take 1/2 tsp Cardamom Powder
Steps to make Sheer Khurma:
- Heat ghee in a pan on medium heat. Once hot, add the chopped nuts, raisins and dates to the pan.
- Cook for 1-2 minutes until the nuts are fragrant and turn golden brown. The raisins will plump up. Remove the nuts from the pan and set them aside.
- Roast the seviyan for around 5 minutes until it starts becoming a light golden brown in colour.
- Now add the khoya/mawa and roast for another 1-2 minutes. This step is optional, you may skip it.
- Next add the milk to the pan and stir. Increase heat to medium high and let the milk come to a boil. Stir occasionally in between so that vermicelli doesn't stick to the bottom of the pan.
- Cook it for 7-8 minutes in medium high flame. When milk will reduce and thicken slightly add sugar and mix.
- Put the fried nuts, rose water and the cardamom powder and give a light mix. Cook for 1-2 more minutes and turn the gas off.
- It's ready to serve.
