  5. Prepare 1/4 cup Milk - (if needed)

Steps to make Mysore Pak:
  1. Add a tsp of ghee in a nonstick pan, add besan flour and roast it till a nice aroma comes say for 3 to 4mins. Then sieve it once such that there are no lumps found.
  2. Now in a bowl, add 3/4 cup ghee with roasted besan flour and mix well to form a smooth pouring consistency batter without lumps. Set aside for 15 minutes. Meanwhile grease a plate(preferably square plate) with little ghee and set aside.
  3. Now in a nonstick pan add sugar and water, in medium flame, bring it to boil and check for one-string consistency. (If you take the sugar syrup between the thumb and the index finger a single string will form. That is the correct consistency).
  4. Add the besan ghee mixture to the sugar syrup & mix well. This should be in a soft smooth consistency. If it is in a crumbled form, don't worry add milk to it & stir well to form that smooth consistency(smooth consistency is very important otherwise the mysore pak will be in a crumbled form)
  5. Now add the remaining 1/4 cup ghee in intervals to avoid drying and mix well. There should not be any lumps. Keep stirring continuously for about 10 minutes in low flame. At one stage, it will comeout as a ball without sticking at all. The mixture will not be sticky anymore(this step is important otherwise it will not be soft).
  6. At this stage switch off and pour it in the ghee greased plate. No need to flatten it, it will spread all by itself. Keep aside for 30 minutes till it cools. Then cut into squares / diamonds. Delicious & mouth melting mysore paks are ready to serve.
