Our dum aloo recipe is also called Punjabi dum aloo. Chilli-coated potatoes in dum aloo curry are cooked with cream, tomatoes and a flavourful paste of whole spices and onions. Dum Aloo or Aloo Dum, a rich and special dish in Kashmiri Cuisine and also in Punjabi Cuisine. The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices.
Instructions to make Dum Aloo:
- Assemble all ingredients.
- Cut the potatoes in cubes.
- Boil potatoes in 2 cup water. Cool & shallow fry them.
- Heat oil in a karahi with bay leaf & cardamom. Add ginger garlic paste & cook till aroma smells.
- Grind the onions, tomatoes & almonds in the mixie till it becomes a smooth paste.
- Add this tomato paste in the karahi. Add salt, red chilli powder, turmeric powder & garam masala. Cook, it becomes thick.
- Now add curd.cook till it becomes thick & add potatoes with 1/2 cup of water.
- Stir well & after a boil cover it with lid or foil. Dum cook on low flame for 5-7 minutes.
- Open the lid & sprinkle Kasuri methi. Again cover & cook for 3 minutes. Switch off the flame.
- Now sprinkle coriander leaves & powder. Serve hot with rice or chapati.
