- Make ready 1/4 cup Fresh Curd
- Get as needed Water

Our dum aloo recipe is also called Punjabi dum aloo. Chilli-coated potatoes in dum aloo curry are cooked with cream, tomatoes and a flavourful paste of whole spices and onions. Dum Aloo or Aloo Dum, a rich and special dish in Kashmiri Cuisine and also in Punjabi Cuisine. The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices.
Instructions to make Dum Aloo:
- Aloo - Pressure cook potatoes with the required amount of water and salt for 2 whistles. Once cooled completely, peel off the skin and gently poke with fork all over the potatoes and keep aside.
- Paste - In the kadhai, heat oil. Add dalchini, cloves and cardamom. Saute for a minute. Add onions and saute till they turn translucent. Then add ginger garlic paste. Then add tomatoes and cook till they turn soft. Allow it to cool down completely and blend to a smooth paste using a mixer grinder jar without adding water.
- Kashmiri Dum Aloo - In a big kadhai, heat up the oil on medium flame and add jeera. Once they splutter, add prepared paste and cook for 6 to 7 mins.
- Now add kashmiri red chilli powder, turmeric powder, dhaniya jeera powder and salt. Mix all well and cook till oil separates. Lower the flame and add curd. Add spices if required. Add water to adjust the consistency. Mix well and cook for a minute. Add prepared fried aloo. Cover with the lid and cook for at least 15 to 20 mins, stirring in between. Finally, add Kasuri meethi and switch off the flame.
- Garnish with coriander leaves and serve hot with roti or tandoori roti.
