Our dum aloo recipe is also called Punjabi dum aloo. Chilli-coated potatoes in dum aloo curry are cooked with cream, tomatoes and a flavourful paste of whole spices and onions. Dum Aloo or Aloo Dum, a rich and special dish in Kashmiri Cuisine and also in Punjabi Cuisine. The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices.

Instructions to make Dum aloo:
  1. Fry the potatoes in oil-and haldi. Take it out. Then to it add more oil and add garam masala,bay leaves and chilli. Saute for a minute.
  2. Add tomato and fry for a minute then add ginger and green chilli paste. Fry for 1-2 minutes. Add haldi and red chilli powder and mix well.
  3. Add salt and sugar and fried potatoes and mix well. Add 1 cup water,cover and cook for 5-10 mins. Then add salt as per your taste and cook on high flame
  4. Add garam masala and a tsp of ghee. Cover with lid. Serve with puri or naan
