- In a pan heat ghee and oil.
- In a large kadai or wok add gram flour.
- Roast it till colour starts change and a nice aroma comes.
- In a thick bottom pan take sugar and water.
- Keep boiling and stirring till the sugar attains one string consistency.
- Add cardamom powder in sugar syrup.
- Keep the flame on very low and add sugar syrup in roasted gram flour little by little.
- Stir continuous to make sure there are no lumps formed.
- Adding in batches and continuously stirring avoids from forming lumps.
- Now add hot oil+ghee in batches.
- Continuously stir till oil is absorbed completely.
- Keep repeating to adding oil 4-5 times and stirring till the mixture starts to separate from pan.
- Immediately, transfer the mixture to greased tray or a square cake pan.
- Press lightly with spoon to spread mixture evenly in pan.
- After 5 minutes cut into pieces as desired.
- After 30 minutes separate the pieces.
- Serve tasty and melt in mouth mysore pak.
