Our dum aloo recipe is also called Punjabi dum aloo. Chilli-coated potatoes in dum aloo curry are cooked with cream, tomatoes and a flavourful paste of whole spices and onions. Dum Aloo or Aloo Dum, a rich and special dish in Kashmiri Cuisine and also in Punjabi Cuisine. The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices.

Steps to make Dum Aloo:
  1. Peel of potatoes and prick potatoes by toothpick.
  2. Potatoes marinate with all masala oil salt and curd except onion ginger tomato and garlic paste and keep aside for one hour.
  3. Heat a pan with one teaspoon mustard oil. Add sliced onion and saute till it become soft. Add garlic and ginger paste and saute for a while and add chopped tomato and fry by adding pinch of salt turmeric and kashmiri red chilli powder.
  4. In a pressure cooker keep marinate potato and let it to two whistle.
  5. Add fried onion ginger garlic paste with dum aloo and garnish with slitted green chilli and coriander leaves.
