- Get 8-10 baby potatoes
- Prepare 2 tbspn oil

- Get 2 tbsp Curd
- Take 7-8 cashewnuts
Our dum aloo recipe is also called Punjabi dum aloo. Chilli-coated potatoes in dum aloo curry are cooked with cream, tomatoes and a flavourful paste of whole spices and onions. Dum Aloo or Aloo Dum, a rich and special dish in Kashmiri Cuisine and also in Punjabi Cuisine. The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices.
Instructions to make Dum Aloo:
- Rinse potatoes very well in water. And put it for boiling for 12-15 minutes.
- Simmer the potatoes when almost cooked, do not over cook it. Drain all the water and let the potatoes become warm or cool down at room temperature.
- Then peel potatoes and prick them with fork.
- For grinding - Keep cashews in hot water for 15 minutes and then remove it and make a smooth paste with rest of the ingredients.
- Now heat oil in kadhai, and fry potatoes in it. In same oil add caraway seeds, and onion-tomato paste.
- Saute it for 2-3 minutes. Now add crushed bay leaves, cinnamon and cardamom. (you can add this without crushed also, add this with caraway seeds in tadka) now add rest of the dry spices and again saute it. When oil starts to release from sides add water.
- When water starts boiling add fried potatoes in it and cook it.
- Serve dum aloo with roti, chapati naan or jeera rice.
