  17. Make ready Oil to fry

Our dum aloo recipe is also called Punjabi dum aloo. Chilli-coated potatoes in dum aloo curry are cooked with cream, tomatoes and a flavourful paste of whole spices and onions. Dum Aloo or Aloo Dum, a rich and special dish in Kashmiri Cuisine and also in Punjabi Cuisine. The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices.

Instructions to make Dum Aloo:
  1. Deep Fry all peeled off baby potatoes till golden yellow.
  2. Make a paste of tomato and green chilli.
  3. Make a paste of ono,garlic and ginger.
  4. In a pan hot 2 tbsp oil and add cumin seeds till crackled.
  5. Now add whole garam masala.
  6. Now add onion garlic paste and cook for 2-3 mins
  7. Now add red chilli powder, turmeric powder, coriander powder and salt and again cook for 2-3 mins.
  8. When it leaves the oil add tomato paste and cook for 2 mins.
  9. Now add milk and cream and cook for 1-2 mins.
  10. Now add garam masala powder and crushed kasoori methi and mix them well and turn off the heat.
  11. Now place all fried potatoes in a serving bowl and on potatoes pour the gravy.
  12. Your tasty and spicy “Damm Aaloo” is ready. Serve it with chapati, naan or rice😋😋
