- When the chicken is slightly browned and almost done (approx 3 min), add the chopped onion, chilli and tomato. Add salt for the veg. You can check if the chicken is done by breaking the pieces with a spatula. It should cut easily. Break up the larger chicken pieces.
- Cook until the veg is done (approx 3 min)
- Break the eggs into a vessel add salt and mix them with a fork, add the fried mix into the egg and mix. Retain the excess oil in the pan.
- Add 1.5 tbsp of oil to the pan and heat. Add the egg mix into the pan
- Jerk the pan a bit in a circular motion so that the egg mix spreads well and the oil becomes foamy. After a minute, cut the omelette into 4 pieces using a spatula (while in the pan). This makes it easy to turn over and also gives extra crispy edges. Make sure that the pieces are completely separated. Jerk the pan a bit more (1-2 min)
- When the edges are browned, turn the pieces over individually and cook for 1-2 min more.
