Keep the chicken moving and then add garlic and ginger and stir. Add scallions, pineapple, soy sauce, sesame oil, rice and salt and pepper to taste. Remember there is salt in the soy even though its low. Drain juice from pineapple into glass measuring cup.

  1. Toss the chicken in some salt and pepper to season then let marinade in the soy sauce and set aside.
  2. Heat 1 tbsp of the oil in a frying pan over a medium heat
  3. Add in the garlic and ginger, cooking for 1 minute until softened
  4. Add the rest of the oil to the pan with the chicken pieces and cook until sealed on all sides
  5. Add the carrot, pepper and green beans and cook a further 2 minutes until the chicken is browning before adding mangetout, sweetcorn, pineapple and cooked rice
  6. Drizzle fresh soy sauce over, stir through then serve
