- Remove the stems from the dry Kashmiri red chillies, deseeded them & soak them in hot water for 20 mints.Then grind the red chillies with water to get a fine paste.
- Take 400 gms curd in a bowl.To this add 1 tbsp of ground masala powder, 1/2 tsp dry ginger powder, all of the chilli paste.
- Mix everything together & whisk them to combine everything well to get a creamy & nice yogurt mixture.
- Take a kadai,add about 1/4 cup of oil,1/4 tsp of asafoetida,1/2 tsp turmeric powder, 1tsp Kashmiri red chilli powder to get a lovely colour.
- Add half a cup of water & salt to taste. Pour the yogurt mixture & bring it to a boil.
- While the oil separates add the fried potatoes.Cover & cook till the potatoes absorb gravy & the oil surfaces.
- Then turn off the flame.Garnish with garam masala powder & chopped coriander leaves.
- Serve the delicious hot kashmiri dum aloo with phulkas or nan.
