Our dum aloo recipe is also called Punjabi dum aloo. Chilli-coated potatoes in dum aloo curry are cooked with cream, tomatoes and a flavourful paste of whole spices and onions. Dum Aloo or Aloo Dum, a rich and special dish in Kashmiri Cuisine and also in Punjabi Cuisine. The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices.
Instructions to make Dum Aloo:
- Par boil potatoes. Cool. Peel them.
- Either fry them in Kadhai or use Air fryer. I have used APPE PAN to roast them. Roast till they are golden in colour.
- Now take a Kadhai. Add oil. Heat. Add cumin seeds, coriander seeds, Fenugreek seeds, whole red chilli, bay leaves, cloves.
- Make puree of tomatoes and add to it. Add salt, turmeric powder and degi Mirch. Cook till oil oozes out. Now add curd slowly and stir continuously. Add water and fried potatoes. Cook for 5 to 6 min.
- Garnish with coriander leaves
- Enjoy with rumali roti, tandoori roti, naan or paratha ☺
