Our dum aloo recipe is also called Punjabi dum aloo. Chilli-coated potatoes in dum aloo curry are cooked with cream, tomatoes and a flavourful paste of whole spices and onions. Dum Aloo or Aloo Dum, a rich and special dish in Kashmiri Cuisine and also in Punjabi Cuisine. The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices.
Steps to make Dum Aloo:
- Add potatoes in pressure cooker. Take 2 whistles.Once cool peel the skin of potatoes. Prick all over the potatoes well with fork.
- Heat 2 tbsp oil in pan.once it's hot add potatoes,1 tbsp chilli powder,turmeric powder and little salt. Saute till they turn golden brown.keep them aside.
- Make paste of garlic ginger,green chilli,tomato onion and cashewnuts. - in a kadhai add 2 tbsp of oil along with cumin seeds,cinnamon stick,bay leaf,cloves and cardamom. - once crackle add onion mixture paste and fry for 5-6 minutes.
- Now add spices chilli powder, turmeric powder, coriander powder, cumin powder and salt to taste. - continue to fry till oil separates.Now add curd. mix well.
- Add 1 cup of water or as required.add fried potatoes and cook for sometime. - add kasuri methi.garnish with coriander leaves and serve dum aloo hot with chapathi or naan.
