Our dum aloo recipe is also called Punjabi dum aloo. Chilli-coated potatoes in dum aloo curry are cooked with cream, tomatoes and a flavourful paste of whole spices and onions. Dum Aloo or Aloo Dum, a rich and special dish in Kashmiri Cuisine and also in Punjabi Cuisine. The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices.
Instructions to make Dum Aloo:
- Wash the potatoes, Boil them and peel them. Now prick the boil potatoes with fork or toothpick and fry them in hot oil on medium high flame until crisp and turns golden brown and Drain them in a plate on tissue paper to remove excess oil and keep aside.
- In same oil, add cumin seeds, bay leaf and chopped onions /Onion paste and ginger garlic paste and saute all well and cook till they turn translucent.
- Now add salt, red chilli powder and coriander seeds and tomato puree and stir well. Now add curd and cook until oil starts separating.
- Cook the masala well and then add fried potatoes, add water and kasuri methi and mix all well and bring it to a boil on medium flame.
- Garnish with fresh coriander leaves and Serve hot with roti and rice.
