Instructions to make Dum Aloo(Odia Style):
  1. Heat oil in a pan. Add cumin seeds, bay leaf and cinnamon. When cumin seeds sizzle, add chopped onion. Fry till onion turns brown. Add ginger garlic paste and saute till the raw smell of garlic goes away. Now add chopped tomato and cook till soft. Next add turmeric powder, red chilli powder, cumin powder, coriander powder, salt and saute till oil starts to ooze out from the sides.
  2. Now add baby potatoes and saute till the masala coats the potatoes well. Then add 1/2 cup of water and bring it to boil for few minutes till the gravy becomes little thick.
  3. Next add garam masala powder and chopped coriander leaves. Cover and turn off the flame.
  4. Thus ready is the delicious dum aloo to be served hot with roti, paratha or naan.
