Almondigas Recipe is believe to be originated from the traditional Mexican meatball soup called Albondigas soup. This meatball-and-noodle soup is a comforting Pinoy dish. Make the meatballs: In a large mixing bowl, combine the ground pork, half of the onion. This albondigas soup recipe was given to me from my mother-in-law.
Instructions to make Almondigas:
- Mix all ingredients of the meat ball and form small balls of a marble size
- Sauté onions and garlic in two tablespoons cooking oil then add chopped carrots
- Put chicken stock and put it in a boil
- Add slowly the meat balls in the boiling soup add more water if needed
- When the meat ball floats the meat is cooked.
- Add the misua noodles and wait for it to cook for 5 minutes
- Put off the fire and add the chopped onion springs. Put salt and pepper to taste.
It's definitely one my favorite soups. Honestly, it's better than most restaurants that I've tried. Albondigas (or albondiguillas) is the name for Spanish meatballs. And while you may not find them gracing a dinner table, they are still commonly found around Spain, just a little.
