- Get Tempering/seasoning
- Make ready 1 Tbsp Ghee/Oil (As per choice)
- Get 1 Tsp Cumin seeds/jeera
- Get Pinch asafoetida/hing
- Get 3-4 dry red chilli
- Get 1 bayleaf
- Get 2-3 Garlic cloves
- Prepare 4-5 Fresh curry leaves
- Get 1/2 Tsp Ginger paste
- Prepare Dhokli
- Take 2 Cups Whole-wheat flour
- Prepare 1 Tsp Carom seeds/ajwain
- Make ready 1 Cup chopped fenugreek leaves
- Prepare 1 Chopped green chilli
- Prepare 1/2 Tsp Rock salt
- Make ready 1/2 Tsp Turmeric powder

- Take Water to knead the dough
In India, pressure cookers are commonly used for cooking lentils and beans. So to make Dal Dhokli in Daal Dhokli - Savory whole wheat noodles cooked in sweet. Dal Dhokli is a very popular Gujarati dish in which spiced uncooked pieces of whole wheat dough are simmered in the dal or cooked separately and added to dal and then simmered. It is very delicious and makes a filling meal by itself.

- For dhokli mix all the "Dhokli" ingredients and knead the dough. Neither tight nor too soft.
- Make small flat balls or roll the dough and cut into diamond or any shape you want.
- Make sure dhokli must not be too thick. Let them boil until they cook properly. I boil them seperately and then use same water at the time of booking daal. That makes daal more delicious.
- Once dhokli done,keep aside after draining water.
- Mix all daal, rinse well. Add water, chopped veggies, salt & turmeric powder. Pressure cook for 2-3 whistle.
- Heat ghee, add asafoetida, cumin seeds, ginger chilli paste, garlic paste. Little more red chilli. Add into daal & garnish with coriander leaves.
- Add dhokli in daal. Serve hot.
I normally do not have rice with it but. Guvar Dhokli Nu Shaak- Guvar /cluster bean is a variety of flat bean grown in India ,specially popular in South and North It taste slightly bitter so little amount of jaggary/sugar,tamarind or lemon juice is added to balance the taste.it is mostly used to make stir fries,curries and to add in sambhar and daals. well, i make types of dal dhokli recipe on day to day basis with my leftover dal and leftover roti/chapatis. but it is an ad-hoc recipe where i do not follow the traditional boiling dal curry. also, i have prepared the dal specific to dhokli recipe respecting the authentic style.
