Steps to make Potato Balls:
- Peel and dice the potatoes. Wash and boil in water. When fork tender drain.
- Mash the potatoes adding salt until there is no lumps set aside and let cool.
- Heat oil and add the onion and bell pepper. Fry stirring often. Sauté till onions are translucent and soft.
- Remove from heat and set aside.
- In the remaining oil add beef and brown. When it's done set aside with the onions and peppers. Chop the olives.
- In the pan on low heat, add the vinegar, olive and Tomato paste. Add the beef, onions and peppers. Season with the rest of the spices.
- Set aside and let cool.
- When the potatoes and filling is cooled form the potatoes into balls.
- Beat the eggs. Now place the flour in a bowl.
- Add breadcrumbs to a bowl.
- Make a crater in the center of potato ball.
- Add meat filling to the center.
- Close the ball back together.
- Roll the ball in the flour.
- Then the egg
- And final coating of breadcrumbs.
- Put into refrigerator to cool at least 2 hours
- Heat oil and deep fry about 3-4 minutes.
- If shallow frying roll the ball around in hot oil till every side is crispy about 1 minute per roll
- Move to a paper towel to absorb excessive oils.
