- Prepare 1/4 Tuber Yam
- Get 3 fresh pepper diced
- Take 1 fresh tomatoes diced
- Prepare 1 bulb onions diced
- Take 4 eggs
- Take to taste salt
- Get cooking spray
- Get 1 cksp veg oil
Steps to make Yam Frittata:
- Peel the back of yam and slice to your desired shape, wash and drain add salt and set aside
- Heat up frying pan, add vegetable oil once its hot add yam and fry till its abit tender not too dry; drain in a paper towel and set aside.
- Pre heat oven to 240degree and grease baking dish with cooking spray
- In a bowl break eggs add a pinch of salt, tomatoes, pepper and onions whisk and set aside.
- Pour a little of the egg on the greased baking dish and layer the fried yam into the baking dish after you are done with the fish set pour half of the remaining egg and layer another set of yam into the baking dish and pour the remaining egg bater
- Place into the oven for 20mins and remove once its set.
- Serve and enjoy your meal
