  1. Heat oil in a pan over a medium high heat. Add carrots and reduce the heat, and sauté for 5 mins.
  2. Add moong dal and Yams and stir for a further 5 mins.
  3. Add the water, cover and simmer on a low heat for approx. 15 mins.Mash together and let it cool.
  4. Add egg to the mixture and combine.
  5. Start forming Croquettes shape by taking 1 -2 tbsp of mixture in hand then coat it into bread crumbs.
  6. Place on a greased baking tray, lightly spray with oil and cook for approx. 30 mins (until golden)
  7. Serve with yogurt dip for kids and sauce for adults.
