- Make ready 2 tbsp Split red mustard
- Take to taste Salt
- Get 1 tsp Red chilli powder
- Take 1 cup Yellow moong dal
- Make ready 1/4 cup Urad dal

- Get 1 tsp Grated ginger
- Prepare 1 pinch Asafoetida (hing)

Instructions to make Kanji Vada:
- Take 1ltr of lukewarm water add red mustard,red chilli powder salt to it.mix well keep covered for 7-8 hours to ferment.
- Wash and soak both daals together in 2cups of water for 3-4hours.
- Drain them and add green chiili garlic cumin salt and asafoetida to it.
- Grind it to the thick paste using nominal quantity of water.
- Transfer it to a pot add soda to it and mix well.
- Heat oil in a kadai.make small ball size vadas from the prepared mixture and deep dry it till done.
- Cook over them lightly.
- Soak vadas in luck warm water for 15mins.
- Drain and squeeze them gently to remove the water and then soak them in the kanji water for about 5-6hours or overnight.
- Store in fridge and serve it chilled.
