  1. Make ready 2 tbsp Split red mustard
  2. Take to taste Salt
  3. Get 1 tsp Red chilli powder
  4. Take 1 cup Yellow moong dal
  5. Make ready 1/4 cup Urad dal
  6. Get 2-3 Green chilli
  7. Get 1 tsp Grated ginger
  8. Prepare 1 pinch Asafoetida (hing)
  9. Take to taste Salt
  10. Prepare 1/2 tsp Backing soda
  11. Take As needed Oil for frying
Instructions to make Kanji Vada:
  1. Take 1ltr of lukewarm water add red mustard,red chilli powder salt to it.mix well keep covered for 7-8 hours to ferment.
  2. Wash and soak both daals together in 2cups of water for 3-4hours.
  3. Drain them and add green chiili garlic cumin salt and asafoetida to it.
  4. Grind it to the thick paste using nominal quantity of water.
  5. Transfer it to a pot add soda to it and mix well.
  6. Heat oil in a kadai.make small ball size vadas from the prepared mixture and deep dry it till done.
  7. Cook over them lightly.
  8. Soak vadas in luck warm water for 15mins.
  9. Drain and squeeze them gently to remove the water and then soak them in the kanji water for about 5-6hours or overnight.
  10. Store in fridge and serve it chilled.
