Instructions to make Kashmiri Dum aloo:
  1. Heat the oil in a pan fork the holes in the potatoes with a fork and deep fry these potatoes in the oil until golden and crisp.now remove the potatoes.on the absorbent paper.
  2. Whisk the yogurt till smooth and add dry ginger and, fennel powder.Mix keep aside.
  3. Now in a pan take some oil and add cinnamon, black cardamom, Caraway powder and asafoetida. stir it.
  4. In a bowl take kashmiri chilli powder and some water for a smooth paste.mix well.add it in the pan.
  5. Now add yogurt and keep stirring on high flame.,(stir continuously, so that the curd does not split.)cook for few minutes.
  6. Now add fried baby potatoes in it.Mix well.add salt,gram masala and little water and place the lid. Cook the kashmiri dum aloo for 8 to 10 minutes on a low to medium flame until the gravy gets thicken.
  7. Garnish with coriander leaves or Caraway powder and serve with naan or rice.
