The ingredients needed to make Pudina Rice:
- Get 1 cup Rice
- Make ready 2 Bay leaves
- Prepare 10 Sliced Cashews

- Prepare 2 Cinnamons small pieces
- Take 1/2 tsp Garam masala
- Take 1/4 tsp Turmeric powder

- Make ready 1 tsp Cumin powder
- Prepare 1/2 tsp Fennel seeds crushed
- Take As required Veggies finely chopped -carrot,beans,potato, peas,tomato
- Get For grinding:
- Make ready 1/4 cup Mint leaves
- Prepare 1/2 cup Coriander leaves
- Take 3 Green chillies
- Make ready 1 inch Ginger
- Prepare 6-7 Curry leaves
- Prepare For garnishing -
- Get As required Grated cheese
- Make ready Some Fried cashews
- Get As required Mint leaves
Instructions to make Pudina Rice:
- Rinse rice,and soak in water
- Chopped all the veggies finely and keep it a side.
- Grind mint leaves, coriander leaves, ginger, green chillies and ginger together adding some water
- Heat ghee in a cooker or any heavy bottom vessel, add shahi jeera, bay leaves, cinnamon, cloves in it and stir it. Add cashews in it and fry it now add veggies in it and stir it again add salt and turmeric powder.
- Now add mint paste in it and mix it well. Cook it for 1-2 minutes. Add curd, sugar, garam masala,cumin powder mix it well.
- Now add rice (removed from water) and saute it for 1-2 minutes. Add water 2 to 3 cups or as needed. When water started boiling add crushed fennel seeds.
- Cover with lid and cook till 2 whistles on low flame. when cooker cools down open lid and add lemon juice in it (optional)
- Serve hot with onion / cucumber raita.
- You can also add garlic and onion in it if you like. Add garlic while grinding mint leaves and add onion with veggies.
