Instructions to make Pineapple kesari:
  1. Heat in a non stick pan, add rava and cashew nuts to it and roast it for 5 - 10 minutes over low flame. Remove the roasted rava to a plate and keep it aside.
  2. Heat a pressure cooker, add water, turmeric powder, pineapple, cardamom powder, sugar, pineapple essence and salt. Let it boil on medium flame.
  3. When the pineapple mixture comes to a full boil, add the roasted rava into the pineapple mixture. Switch off flame.
  4. Immediately after adding the rava, mix well mix and cover the cooker with lid and put the weight. Remember that the flame is off. Do not open the cooker for the next 20 minutes.
  5. Open the cooker after 20 minutes and mix the pineapple kesari well. The rava would have absorbed all the moisture and would have swollen up.
  6. Garnish and Serve the pineapple kesari warm! - Note : - Adjust the amount of sugar as per your taste. -    - Make sure after adding rava, switch off the flame and close the pressure cooker and put on weight. -   - Use good quality rava.
