The vada pav recipe is made of a spicy potato filling deep fried in a gram flour batter. Along with a hot and spicy garlic chutney, batata vada pav is served inside a small "Ladi Pav". Steps to make Vada Pav:
  1. Boil potatoes, once done remove skin and mash it nicely
  2. In a tadka pan, heat some oil, add mustard seeds, once they splutter, add hing, crushed garlic, ginger, green chillies, curry leaves and cook till raw smell goes.
  3. Add turmeric powder, red chilli powder, coriander powder, garam masala powder.
  4. Add the tadka to potatoes, now add salt, chat masala or lemon juice, chopped coriander leaves.
  5. Mix gently till everything comes together and you get a nice tangy potato mixture, adjust seasoning according to your taste. Keep aside
  6. Take a bowl put besan, salt, red chilli powder, soda and water mix so that there are no lumps.
  7. Besan mixture should be smooth and the consistency should b like bhajiya batter.keep aside
  8. Heat oil in a kadai for deep frying
  9. Make small balls from potato mixture.
  10. Once the oil is hot, pick up one ball of potato mixture dip in besan batter and drop in hot oil gently, flame should be medium.
  11. You can fry 3-4 vadas at a time, depending on the size of kadai
  12. Once the besan is nicely cook and remove and keep aside
  13. Repeat for the whole mixture
  14. Once the vadas are done, put of the flame and put green chillies for frying remove once they are crispy from out.
  15. Season fried green chillies with salt.
  16. To serve slit the pav, apply any chutney or ketchup of your choice place the vada in the gap and serve hot with green chillies for bambaiya zing
